Persian Love Cake

 

This is one of my favorite recipes to make for anyone. It works as a perfect cake for brunch, an amazing cake for dessert, or just a little pick me up for someone that has had a bad day. It has amazing aromas of rose petals and lemons and its not too sweet. There are many different recipe for this classic cake, they almost all contain rose water and almond flour. The story behind the cake is that there was a Persian woman who was madly in love with a prince and to make him fall in love with her she baked him this cake filled with a love powers, she put a spell on the cake. From what I learned there are two outcomes that are told, the prince did fall for the spell and fell in love with her, and the alternate ending is that he did not return her love and she ate the entire cake! Either way it’s a beautiful story and a very unique cake that is sure to please anyone you make it for. 

 

For the Cake:

¾ cup softened butter

1 cup white sugar

3 large eggs

2 cups all purpose flour

1 tsp baking powder

¾ tsp salt

¾ cup buttermilk

2 Tablespoons ground cardamon

2.5 Tablespoons Rose Water

 

For the frosting:

2 ½ cups powdered sugar 

1 tablespoon rose water

¼ cup heavy cream

 

For the Garnish:

¼ cup Chopped pistachios

Dried rose petals

2 Tablespoons Grated lemon zest

 

Preheat oven to 350 degrees. 

Combine dry ingredients and sift or whisk them together in a separate bowl and set aside. In a mixer beat the butter ad sugar until well combined, scrape down the sides of the bowl with a spatula (this should take 3-4 mins). Add the eggs one at a time, scraping the sides of the bowl. Add rose water and then alternate the buttermilk and dry ingredients slowly adding to the mixer in three additions. Don’t over mix. Add the batter to a well buttered baking dish of choice, I prefer a 10 inch cake round. Place in oven for about 45-50 mins or until a toothpick comes out clean. 

 

In a separate bowl add the ingredients for the frosting and stir until smooth. Once the cake has baked and cooled drizzle the frosting on the cake and add the garnish as a decoration, be creative with it and make it look beautiful!
