Super Spinach and Asparagus Soup (Vegan)

Sometimes I feel like I just need to do some food damage control and my body is crying out to feed it something healthy and green. I mean sure, I could get the juicer out and make some green juice, or make a smoothie…but sometimes you just want something a little more soothing and a salad or green juice just won’t cut it. Cue in the mean, green spinach and asparagus soup. It’s just the vegetables that we know our body loves and needs and it all comes together in a perfectly healthy, warm and wonderful soup. You can eat the hell out of this and it will do nothing but nourish you, body and soul. But I will say, if you’re not trying to avoid dairy feel free to finish this soup off with a cup of heavy cream. It will make this soup truly elegant

Super Spinach and Asparagus Soup

Ingredients:

16 ounces of baby spinach

2 pounds of asparagus (chopped)

1 quart vegetable broth

1 yellow onion

3 cloves of garlic

1.5 Tablespoons salt

1 lemon

Chives

Olive oil

Turn on stove to medium heat and add 2 table spoons of olive oil, Add chopped garlic and onion and sauté until tender.

Add vegetable broth to the pot, salt, asparagus and spinach.

Place lid over pot and simmer until tender, about 15 minutes.

Place contents of pot into a blender and blend until smooth, stir in the juice of one lemon and add additional salt and pepper if needed. Top with chives.
