Sweet Chili Party Shrimp

I have a version of this shrimp at many different chain restaurants, it’s usually called “dynamite” or “bang bang” shrimp and it is always a hit at any party when I make it! It’s got great sweet, spicy and acidic components. That’s why I call my version Sweet Chili Party Shrimp. It will be demolished about as fast as you can fry it! If you want to turn it into a complete meal serve it over sushi rice with extra sauce on top!

Ingredients:

1 pound large raw shrimp (sliced in half, lengthwise)

4-6 cups vegetable oil or peanut oil for frying

1 cup Cornstarch

Sliced Scallions

Sesame seeds

 

Sweet chili sauce

1/3 cup mayo

1 TS sweet chili sauce

1TS sriracha

1TS rice wine vinegar

1 tsp Gochujang

 

Combine all the ingredients for the sweet chili sauce in a medium size bowl and wisk well until combined. Heat oil in a large pot to 375 degrees. While the oil is heating coat the shrimp pieces in cornstarch and set aside. Once oil is fulled heated carefully drop shrimp in the oil and fry until golden brown about 1 ½-2 mins. Placed cooked shrimp on a paper towel and one shrimp is all cook toss in Sweet chili sauce and add scallion and sesame seeds for garnish. Best enjoyed immediately
